On a different thread, I talked about making a hash brown & sausage breakfast casserole...I have only ever used Jimmy Dean Sage breakfast sausage for this recipe...and truth be told, I have not made it in a few years until this past Monday night....well...I had to double the recipe meaning I bought 2 one-pound packages of the sausage. Cooked each up in a separate frying pan...hardly any fat/grease but JUST ENOUGH to mix in the required 2 TB flour with which to make the sausage gravy...here's my plug: Jimmy Dean sausage still 1 pound (16 ounces) and still pretty lean. And still tastes good enough so that my son asked me to make one regular recipe of it just for him...so here, tonight, I'm frying up yet a 3rd package of the stuff...and again am amazed at how lean it is...just enough to mix in the flour for the sausage gravy. It's just nice that some things don't change, that's my point. We've all seen so many package sizes decreased and quality compromised in certain food products...not this one, as far as I can tell.
