Shallots-5 lbs of them--revisited

Thanks to RGR for posting that suggestion about Patricia Wells' recipe for chicken with 60 shallots. After giving away a few pounds of them I didn't use exactly 60 for the recipe but it turned out very well. I made a potato and fennel gratin to go with it and a small mache salad that I dressed only with some extra virgin olive oil and Malden salt. Now if only someone would give me 5 lbs of foie gras...
