Thank you for all of the very helpful responses! Can someone comment on why there is only one game in town (Boudin) when it comes to sourdough bakeries? Did the old bakeries up and die and take their methods to the grave? I have an ancient starter however, we do not have the yeasts in our air, and cannot make a decent (IMO) sourdough.
