SF denizen going to both Las Vegases & Santa Fe

Greetings. I'm a longtime participant (and fan) of the various California boards, but this is my first visit here.

First,a query, please: How do folks figure out where places are when they're mentioned with no identifying city?

I never expected to visit Las Vegas, NV; it has never held any attraction for me. But we're attending a wedding there in November and, as long as we're there, may spend an extra day or so.

I'm allergic to tobacco smoke so sort of nervous about the whole experience. (I love to play low stakes blackjack--is there such a thing as smoke-free?)

I cook and eat heart healthy, organic, and sustainable, and am not, by temperament, a "when in Rome" person.

Since I live in San Francisco and visit NYC and LA now and again, I'm not exactly culinarily deprived. I get a deli fix at Canter's once or twice a year and prefer eating "Hong Kong Chinese" or obscure-to-us varieties of other Chinese cooking in LA's minimalls.

Of everything I've read so far in a quick hour, the only places that temped me were Commander's, Canter's, and Le Notre--where, if I could find pain aux raisins, I might indulge. Does it have a lunch menu with wonderful French salads?

If anyone can suggest places that more or less share my (Alice Watersesque) approach, I'd be grateful.

We're stayng at Bellagio.

I'm also planning my first trip back to Santa Fe in 26 years. Would be grateful for suggestions. Will be staying with friends in Las Vegas, NM, next month.

Thank you. Everyone seems--Chowhound-style--really nice and friendly on this board.
