Specifically, I am looking for a ceramic induction cooktop (hot plate, if you will) like the one in this photo. They're great because they're powerful enough to bring a large pot of water to a rapid boil pretty quickly, but also have lower settings if you just want to keep food warm at the table. My parents use theirs for hot pot or to keep soup warm at the table.
The thing that sets this apart from other hot plates is the ceramic top and internal magnetic (?) chips. Somehow, if a pot is removed, the ceramic plate stops putting out heat immediately. There is residual heat from the pot, but not enough to ever burn anyone. For example, if you turn it on for five minutes, you can put your hand on it and it feels cool. Then, if you put a pot of hot water on it, it starts boiling quickly. Amazing!
I love Sunpentown products, but haven't hunted for them since I moved to SF. Any suggestions? For this, I'm even willing to travel further afield. Down in LA I was lucky enough to live near a distribution center.
