Who serves carp (and how)?

So I caught (and released, to the disdain of the curious bystander) a 12 lb. or so golden carp in the Palo Alto Baylands. The Curious Bystander covered up his disappointment at not being offered what I wasn't going to use anyhow by saying that not many folks like to eat carp - it's bony and can taste muddy. After I stopped patting myself on the back, I wondered where I could find out whether the Curious Bystander was sourgraping or not.
