What to serve with panes con pavo (El Salvadorian turkey sandwich)

I am planning on making panes con pavo/pollo for a group of friends. The turkey or chicken is braised in an aromatic liquid, once cooked some of the liquid is reserved and used to make a tomato sauce. Curtido (a vinegary cabbage slaw)is traditionally served with it. I would like to make an additional side dish. It doesn't have to be from El Salvador, just something that would compliment the sandwiches. I will be preparing the turkey and the sauce ahead of time and transporting it the kitchen in my condo complex's clubhouse. In other words, I am looking for something that can be prepared ahead of time or easily assembled once I get there. No frying please. My party is in January so maybe a less starchy side would be good after the holidays. I am using a friend's secret recipe, but here are a couple of recipes to give you an idea:
