My Semi-Homemade :) 5deMayo meal w/ pics- Lets see/hear about yours

Put together a nice little meal for cinco de mayo tonight. Any excuse for mexican food is allright with me. Plus those mexican cookbooks on my shelves have not been getting enough use. This meal was heavily based upon the loot I picked up at on of the larger mexican markets in my area so it was not that hard to put out a fairly diverse meal of antojitos.

My menu was:
Salsas + pickled carrots and radishes
Margaritas

Quesadillas with Rajas
Huaraches with Carnitas and salsa verde
masa crepes with mushrooms and mole
tacos X 2: chicken w/ nopales and bitter greens and potato w/ salsa rojo.

I actually planned to serve sopes with tinga but my guests said no mas. A good thing too since I was full after my huarache- especially since I snacked on quite a bit of carnitas during assembly of that dish and the next :)

Dessert was ice cream sundaes with vanilla ice cream, cajeta and toasted almonds.

Nice meal and lots of fun. So what did other hounds put together?
