Selecting Kosher Roast

The post below reminded me how much trouble I have selecting which kind of roast at the butchers. I have no idea what the differences are, besides price. Usually I'll brown the roast in my Le Crueset, then simmer or bake it with some variety of spices and beer, wine, or broth. Which kinds of roast are good for this? Thank you.
