Seitan roulade advice needed

Hello everyone!

I going to be making a stuffed seitan roulade for the first time on Christmas. I have found a few recipes, each showing different techniques in making the roulade. For example, one recipe says to roll out the seitan, cut it into pieces and sear it before then filling and baking,

I am wondering if anyone can give me some advice on the best way to go about it to give a moist and flavorful roulade.
