Any "go-to" seitan "bratwurst" recipes?

Hi, I've made a few varieties of seitan for my daughter, usually a silken tofu + wheat gluten mixture with a few spices to make something akin to chicken breast.

Today I got some of my favorite bratwurst (meat market I don't get to frequent due to distance), and would like my daughter to have something at least close to what we're having.

But the seitan/vegan similars recipes I've found online range from "buy Beyond Brats and simmer them in beer" (yes, this was called "a best vegan brat recipe" ! ) to recipes that require 3 kinds of beans mixed with the gluten, which don't sound half bad but have no reviews.

Any Hounds have go-to vegan brat recipes to share?
