I need steak knives, preferably 8 (though 6 would do). I'd rather not spend $160 for 4, which is what it takes for any of the high-end Wusthof or Henckels lines (more for Shun, though it is pretty).
I want it sharp, steady, and NOT serrated.
Any recommendations? A quick Amazon browse suggested LamsonSharp? Chicago Cutlery? Calphalon? Or is the only way to get something durable and sharp to pay serious coin (I didn't mind this with a chef's knife, but steak knives = multiple).
