Seeking Shanghai Recipes

Anyone have any ideas on recipes/home preparation techniques for the following three Shanghai-style items that I've enjoyed (most often at Joe's Shanghai, but other Chinese restaurants serve similar versions):

1. At the risk of being obvious, the soup dumplings (pork/crab)?

2. The black vinegar/ginger sauce that accompanies the dumplings?

3. The turnip (& pork) shortcake?
