I will be road tripping cross-country in early October. Part of this is for a BBQ pilgrimmage to KC. The drive will originate in Las Vegas. Of the myriad options for getting from Vegas to KC, which, from a culinary standpoint, will be the most "scenic"? It looks like the three main options are:
1) I-15 to I-25 to I-70 (UT, CO, KS)
2) I-40 through AZ and NM, then north to CO, east to KS
3) I-40 across to OK (though AZ, NM, and the TX panhandle), then north through western MO.
I'd really appreciate any advice, as well as specific recommendations on particular thoroughfares (exit #s, etc.,.) I have a somewhat romantic notion that there are small-town treasures of eateries lining I-70 through western and central Kansas. Is there any truth here?
