Back around 20 or 30 years ago, there was a chain of bake shops that operated in the NYC subway. One of the things this chain sold was a small spice cake. I'm looking for a recipe.
I'm sure the recipe used the standard brown spices. I suspect as well that it might have used molasses, because the texture was incredibly moist, without being overly sweet. I checked the old JOY and tho it had a few recipes for spice cake, none used molasses.
Anyone have any ideas?
