I loved the butter that came with the bread at a recent dinner at Denver's Root Down. They told me that it has miso and vanilla mixed in, and I replicated it at home. Yum, I'm a little obsessed. What would be good flavored with this combination, while also being healthy? Or at least healthier than heaping the butter on mere excuses of bread, which is what I'm doing now?
Since everyone seems to have a different definition of 'heathy,' my parameters are:
-Sweeteners: Prefer none. Maybe a little honey.
-Fat: Prefer not too fat-dense. Again, status quo = heaps of butter, so beating that shouldn't be tough!
-Carbs: Carbs from vegetables, beans, whole fruits, etc. are A-OK. Prefer to avoid flour and refined grains. Maybe a little whole wheat or semi-refined grains.
-Ingredients: Prefer vegetables, nuts, legumes, fruit, seafood, poultry, and other whole ingredients to anything artificial or highly processed. No ingredients are completely verboten, though.
(Oh, I've seen this:http://www.epicurious.com/recipes/foo... and other googled desserts and they obviously don't qualify! Though that doesn't mean I won't be making them...)
