Seeking good source of charcuterie, offal in northern Colorado

Hi all,
I moved to Wyoming several years ago, and I am still looking for a good source of charcuterie, and offal. Specifically looking for a good source for foie Gras, blood sausage, sweet breads, and other goodies. I am still trying to find my way around Denver / Northern Colorado, and any direction would be enthusiastically received.
