Seeking low-fat, low-flour snackbar recipe

I'm trying to make some snack bars that will be *comparatively* low in refined carbs, e.g. flour and sugar, and also comparatively low in fat.

Does anyone have any ideas? I'm thinking that I'll start with a base of oatmeal and water, add some sugar to help give it flavor and also hold it together, maybe some crushed nuts & seeds.

But how to give it some body or stiffness, so that I can make bars that can actually be picked up?

I was thinking also that if they come out sticky, I could dust them with something like flax seed meal.

I'm not averse to adding egg or some flour or cornstarch, if necessary.

I welcome any and all ideas, speculations, suggestions, etc.
