Seeking Chowhound advice on Amalfi lodgings

I'm planning a trip to the Amalfi coast this summer with Positano as home base. Because my partner is diabetic, a fridge for his insulin, if not a full kitchen, is essential for us. In doing some research for apartments/hotels, I've come across a couple of places that seem to meet our other needs as well(proximity to SITA bus stop, sea view, moderately-priced) and I'd welcome opinions about them if anyone is familiar with the places. Top choices are: Villa Rosa and Casa Maresca. Other possibilities are: Hotel Marincanto and Hotel Miramare. Another candidate (but not in Positano) is Capuccini Convento. Your other recommendations will be appreciated as well.
Also, I'm seeking opinions about:
1) Are Sorrento and Capri worth a day trip each?
2) Alternate suggestions for home base (we need to be near populated centers, hence Positano as a first choice).
This trip is a long-deferred dream coming true so I'd like to make it as memorable as possible. Thanks for helping. ss600
