Secrets for a fluffy omelette?

Captivated by the soufflé-style omelettes of Mme Poulard, I've been playing around with hand-whisked omelettes for the last few days and wonder what secrets people have to make them light and fluffy? I've got my copper mixing bowl and balloon whisk -- and things are improving! -- but I'm far away from an MP soufflé. (Latest attempt pictured.) Do you add extra ingredients? (Extra whites? Cream? Something else?) Whisk in a special fashion? (I've read MP whisks anywhere from 8 to 25 minutes!?) Do something completely unexpected? Help a guy out! :-D
