Seattle hound heads to Vancouver. Advice needed

My husband and I are driving to Vancouver this weekend and are in need of some dining advice. We will be in town for 3 full days and staying at the Marriott Pinnacle.

Primarily, I need advice on New Year's eve dinner. I'm not opposed to spending a lot of money, but most of the NYE menus look to be a bit of a rip off. We've dined at Rain City Grill in the past and liked it (despite some of it's poor reviews here) and are big fans of French bistro style food too. Anyone have a good tip for someplace that's doing something semi casual but nice w/o being outrageously priced?

We also plan to try doing dim sum on New Year's Day. I'm a bit of a novice when it comes to dim sum and would love to hear recommendation on restaurants as well as dishes. Anyone know if places will be open on New Year's day?

Any other top/new/must-try places are welcome too. I'll scan through the threads for what's already been posted. Thanks for all your input- I'll be sure to report back on our meals.
