Seasonal french produce at March and in general+Paris recs on butcher and fishmonger

Hi, i have a very vouge knowledge regarding the seasons and their produce appearance in France/Paris, and would love to learn and hopefully seek and cook whatever interesting stuff i will be able to come up with during the month of March....
Probably (and hopefully) will be the end of "real winter" and this trip is 98% food quest and cooking french produce opportunity - for sure many interesting "summery market" produce will not be available, but are there special seasonal vegi/fruits/meats/cheese/shellfish etc. that i should look for and try during that month ? Or am i a bit "too concerned" and i will find more interesting produce then i'm excpecting to?

And the other part of question - i would like to cook at apartment a decent cote de boeuf, a whole duck (wild one?), possibly a "speciality" chicken, special sea related stuff etc.. Will be staying near Bastille but interested in exploring many many places, and will be glad to know what are your favorites for the above aged veal, different poultry and sea stuff.. Btw would be glad to get some idea on typical prices also, and places that may meet that magical point of excellent quality and reasonable pricing :-) Thanks
