Season ending with lots of cress and pak choi leftover

The garden season is winding down, and I just realized that I have lots of cress and chinese vegetables like pak choi still unpicked. l have used them in the past in salads, stir-fries and egg sandwiches, but I was wondering if anyone could suggest other ways to use them up before the frosts arrive.
