Does anyone know a Boston-area baker that makes Kummelweck rolls?
A culinary highlight of my visits to relatives in Buffalo, NY is "beef on weck": thin-sliced rare roast beef with prepared horseradish on hard rolls topped with a mixture of coarse salt and caraway seeds. These rolls are known as Kummelweck (aka "weck" or "wick").
Sadly, these rolls don't travel well: the coarse salt topping turns the rolls soggy before you can get them home on a plane. I've got recipes, but am not much of a home baker. Any help, perhaps a baker that takes special orders?
