We seem to have had a glut of cookbook questions of late... so let me add my own.
I need a good fish cookbook. Really, I need a really good seafood reference cookbook. One with more of an encyclopedic nature - talking about all kinds of fish, backgrounds of fish, best cooking methods, etc. I'm not necessarily looking for flashy and certainly don't need a celeb chef. I want something to be my reference book on all things seafood.
I've been eyeing James Peterson's, "Fish & Shellfish: The Definitive Cook's Companion." It looks like what I'm looking for, but haven't seen it in person yet.
Anyone have that book, or have another they'd like to recommend?
