[SEA] Special occasion restaurants exhausted

As hard as it is to believe, it looks like we've nearly exhausted our special occasion restaurants. I guess it doesn't help that there aren't a lot of restaurants of this type constantly opening anymore. So, in the off chance that I missed something, any recommendations for a birthday dinner?

Already done the following: Brasa, Cascadia, Georgian, Cafe Juanita, Mistral, Lampreia, Flying Fish, Il Terrazzo Carmine, Tulio, 727 Pine, Palisades, Salish Lodge, El Gaucho.

Not currently interested in: Canlis, Seastar.

Considering: Nell's, Met Grill, Waterfront - Recommendations for/against considered.
