Sea Salt Caramels - does doubling the recipe affect finish product?

I'm experimenting with caramel making and tried the Epicurious Fleur de Sel recipe (link below) and was happy with the result. I'd like to double the batch, but I'm concerned about if the mix will set up correctly in a 9 x 13 pan vs an 8 inch square.

Does anyone have any experience doing this? Successfully or not?
