(SEA) Matt's in the Market or Lark?

A beloved foodie friend is visiting this weekend from NYC. He has requested I choose a restaurant as follows: "something/some place that you really like and probably (because of local ingredients or approach or whatever) probably does not have a direct analogue in NYC." For a variety of reasons I've narrowed the choices down to Matt's in the Market or Lark, but am absolutely incapable of choosing between these two. What say you hounds?
