Before anyone yells at me for posting yet another Per Se inquiry -- yes, I did a search, but my computer skills are failing me, and I can't seem to find what I need after 30 minutes of reading (there were FABULOUS reviews and lots of admonishing from moderators to hounds about strange things). Feel free to direct me to an appropriately focused previous thread.

I'm going in a few weeks for a special birthday dinner. Could someone tell me the difference in price between the 9 and 17 course menu? Is the 17 course menu aka the Chef's Menu and the 2x2 or is that something else?

Does the restaurant want to know in advance if you're going to have the 17 course? How can they appropriately plan the table turn without previous knowledge?

And several people were saying that there is the same amount of food (and time spent) when comparing the 5 and 9 course meals, which I don't understand.

Ideally for me, I'd love to get the 17 course x2 and pair it with a wine tasting. How much should I expect that to set me back? Is the wine pairing set or do they ask you for a budget.

If you have the time and are so inclined, would you please just outline for me the various dining options, their differences, what 'extras' to expect/not expect, and the wine pairing options?
