What do you do with your scraps if you don't have a garbage disposal?

Next to the sink, I've always kept an empty cardboard milk carton opened on the top, to dump vegetable roots, egg shells, and otherwise potentially wet things into. I wonder how everyone else handles stuff like this if you don't own an in-sink garbage disposal? Do you just throw these things in your trash can?
