Scalloped sweet potatoes - how?

I'm trying to create a version of scalloped potatoes using sweet potatoes. So far, my experiment (which is still in the oven) appears to be a failure in the texture/appearance department. Here's what I did:

3 layers of raw sweet potatoes - sprinkled with a bit of sauteed onion, salt, pepper, flour and Parmesan cheese. The top layer is left bare. Poured hot milk over everything, then sprinkled Parmesan on top (so that the milk wouldn't wash it away). Covered with foil and baked at 350o for one hour. Removed the foil and it doesn't look good. The potatoes are surrounded by a watery liquid and clotted cheese. I was planning to continue baking - uncovered - for another half hour in the hopes that it somehow pulls itself together. But I'm not very optimistic.

Any suggestions for future attempts? I was trying to simplify the process by not making a white sauce out of the milk and flour etc. I don't think it worked.
