1. First you can buy the Pomona's Universal Pectin and you will make a liquid pectin by combining 4 tsp pectin to 1/2 c water. You I'll need to add the calcium water also the directions are in the box. Pour your marmalade into a pot and add the pectin and calcium water. After you have mixed thoroughly then if you need to add more sugar you can do that now. Bring to a full rolling boil , remove from heat and ladle into your clean jars. Water bath for 10 minutes if canning. That's it.
2. If you have made more marmalade then keep your pectin bag and add it to your marmalade , bring it up to 220°F and keep at 220 for a full 5 minutes,set that timer. Now do your cold plate test it should be good if not let it cook for 3 more minutes and test again. Now it should be ready. Turn the heat off wait 5 minutes and jar then water bath for 10 minutes if canning. Your done now enjoy!
