Sausage SOS

Today I bought some beautiful ground pork thinking I would try to make sausage (in patties---no casings necessary). I now find I have no recipe and a search on Epicurious didn't find one, just dishes made with sausage. The result I want is a savory breakfast sausage. What should I add to it besides salt and sage?
