Can sausage balls be left unrefrigerated? [Split from Nik Sharma post]

There's a discussion about whether or not sausage balls, made with Bisquick, can be left out at room temperature or not. It seems there's something wrong with me being able to leave a comment, but I have made these for years and brought them for parties and just eaten them at home and have never refrigerated them and no one ever got sick. But, I just made a batch and am letting them cool and will refrigerate them for the first time, ever. What I'm afraid of is when I reheat them before taking them to my son's for Thanksgiving is if they'll be too overcooked and won't crisp up again.
