I am trying to make the classic "Hong Kong cafe" style baked pork chop rice. I can do the fried rice layer and the pork chops, but I cannot seem to get the tomato sauce exactly right. Can anyone share a recipe or let me know what ingredients I should be using? Do HK cafes typically make it with ketchup or tomato sauce/paste?
Just for a frame of reference, I live in the Bay Area and I love the baked pork chop rice at Washington Cafe in SF and Cafe Salina in Millbrae.
