Satisfying a chowhound, and a picky eater, in Vegas

My husband and I will be in Vegas and are looking to have one meal at an upscale place. We're willing to spend about $150 each, including drinks.

The main issue I always come across is that he can be very picky about food. No mushrooms, no fish, doesn't like to try things when he doesn't know what it is. I, on the other hand, love to try new things and am hoping to have a chowhoundish experience.

We've eaten at Delmonico and Wolfgang Pucks the last few times in Vegas and both had a great experience. We will most likely be staying in the center strip area, so any recs near there would be great.
