Picked up some very fragrant sassafras root bark at the aphrodisia herb shop on Bleeker Street across from Murray's cheese (New York). I would like to try and make homemade rootbeer, starting with a sassafras infusion chilled and sweetened then topped up with soda water.
Research tells me that the core sassafras root contains a naturally occuring known carcinogen, so I do not plan to drink gallons and gallons of this homebrew. I've come across several other variations on root beer ingredients including: sasparilla, wintergreen, ginger, birch, juniper.
Any recommendations for winning combinations? Thanks, 'hounds.
