Saratoga Springs caterer needed for wedding

I know this is the NY metro boards, but I figured Saratoga was a frequent destination for some of us NYC residents.

I have booked the site - the Canfield Casino Museum. Now I need the caterer. I am from the NYC area and used to great food and really elaborate weddings. The few caterers I spoke to in the Capital Region seemed amazed that I want open bar for the whole affair, and that I would like more than just passed hor doerves (sp?) for the cocktail hour. I am starting to worry if I can get what I am looking for in Saratoga.

I did speak to New World Home Cooking in Saugerties who said they would cater in Saratoga. I always liked the food there, but I am hesitant about the sometimes if-fy service, especially for a wedding.

I need help! The site is beautiful, but if I can't serve great food, I might just still have the wedding in the NYC area.

Any recommendations?
