Six years ago, the opening of Sanuki Seimen Mugimaru in Costa Mesa's Mitsuwa Marketplace was noted here,
https://www.chowhound.com/post/sanuki... , but I couldn't find any follow-up. I had a chance to try it a couple weeks ago, taking a break from a grocery shopping expedition. It was a little hard for me to bypass Santouka in favor of udon, but Mugimaru seemed more popular just judging by the line, an encouraging sign.
The fat style udon noodles are made on-site every day.
The udon is cooked to order in with the stock or style of choice. This cook cracked open one soft cooked egg, dumped it in a separate small bowl and I guess did not like the looks of it because she tossed it in the garbage before I could stop her. I would have told her to give me the perfect egg from the next one she cracked plus the reject one. From this noodle station, I pushed my tray down the line to the tempura, rice balls and topping self-serve buffet.
I did enjoy the ontama udon (small), shown here with the addition of scallions, chili seasoning and tenkasu, the crispy bits of tempura batter that add richness to the stock. I picked shrimp and kabocha tempura from the buffet. Not only are those my favorite types of tempura, they were the most recent batches stocked on the table and still piping hot.
This was a quick service lunch, delicious, economical and more filling than I expected. I didn't regret skipping Santouka.
