Santa Fe: vegetarians?

We're visiting Santa Fe in early April. We're staying downtown but will have a car. It looks like there are tons of great places to eat and no shortage of vegetarian options at most places, but we'd appreciate guidance on any really *great* places that are vegetarian or have plenty of vegetarian options. (By vegetarian, we mean no meat of any kind, including fish). Mostly we want to sample the local cuisine but if there are other kinds of places (Italian, Thai, whatever) that are "don't miss," we'd welcome those thoughts, too.

We're only there for 4 nights so we most likely won't try to get to Taos on this trip, but we'll probably venture out into the surrounding area some for scenic drives and maybe some hiking (depends on snow). But who knows, we may take a day and go to Taos as well, also some of the small towns like Truchas, Cordova, Las Trampas... appreciate your suggestions for any of those places, or any place within a reasonable distance of Santa Fe that we might hit (probably no further out than an hour or hour and a half).
