I heard on a wine board that 808 has opened in the Aventine. I have not been yet, but am planning on it soon, and I live up in L.A.. The chef/owner is Jean Marie Josselin, who has an 808 at Caesar's, and A Pacific Cafe in Kapaa, Kauai; as well as one on Maui. He is an incredible chef, one of my world favorites. I never miss A.P.C. in Hawaii, and have been to 808 in Vegas a number of times. They feature island cuisine but influenced by JMJ's French training and technique. He also did some early stints here in L.A., New Orleans, and Dallas.
The combination of fine,fresh ingedients yet prepared with uniques sauces and combinations place him a big step of what one might typically think of "hawaii" cuisine. I don't know if they have the wok-charred Mahi with lime ginger beurre blanc but it is great. Like wise the calamari and tiger-eye ahi dish.
I believe he is there himself for an extended period to cook and get the place on firm ground. Not inexpensive, but the kind of creativity and quality that make a fine meal worth it. I'm crossing my fingers that a greater-L.A. outpost will come in the future.
