Sam Hayward cooking at new Maine trail hut

Fore Street's Sam Hayward is taking a road trip to Carrabassett Valley and preparing a five-course dinner with wine pairings at the new Poplar Stream hut to benefit the Maine Huts and Trails system. You have to hike in 2.5 uphill miles on skis, snowshoe or foot to get there--and pack in a sleeping bag--but the trail is gorgeous. It parallels Poplar Stream, and has views of the Bigelows. Hayward's also preparing breakfast. Cost is $250, advance reservation is required. For details and the menu, go to http://www.mainehuts.org/events.htm. If you don't go for Hayward's meal, Jack the hut chef prepares good and hearty fare and his assistant Casey makes to-die-for brownies topped with gobs of fresh whipped cream. Delish. Only thing wrong with the hut I found is that the uphill is on the way in, not the way out, when you want to walk off all that food.
