Sam Gyup Sal (pork butt) question

Recommended in an earlier post I headed over to KunJip on 32nd St. and ordered the sam gyup sal (pork butt). The meal was good (never had pork at a Korean restaurant, usually kalbi and bulgogi), but I have a question...

Is it supposed to be 70% fat? This is not an exaggeration; maybe the "white" part of this meat is really meat and not fat but it sure looked like fat.

The meal was very good but I felt like I should have ordered an angioplasty for dessert.
