Salvage Serrano ham?

So, I received a large boneless serrano ham (from La Tienda) as a gift. It was vacuum wrapped in plastic. When I opened it up and tasted it, the flavor seemed a little off - as if the plastic had leached into the fat/meat of the ham. I cut it up and froze portions of it, as i could not bring myself to throw away such a pricey gift.

Do I need to just cut deeper into the ham and discard the outer layers? Any ideas would be appreciated.
