What is that salty pepper paste in Chinese restaurants?
It has a particular salty and weird flavor in it along with the typical chili paste flavor

They serve it at P.F. Chang's, and Mr. Chow's, and I believe when I go to dim sum in the city (NYC) if you ask for chili paste they give you this same kind

I buy sambal oelek or chili paste from Huy Fong (makers of Sriracha) and it ain't that.

What is this paste?
Is it doubanjiang, the fermented fava bean and chili paste? I think it may be that, but it's been a while since I've tried that.

What is this paste?
