Over the weekend I watched Jacques Pepin and
Julia Child make homemade sausage and pate(on TV).
They agreed that saltpeter should be added
(although it is an optional ingredient) to
maintain the color of the finished product.
Indeed, their finished sausage and pate did
have a good color. (My pate always turns out grey
while theirs had a rosy pink interior.)
Now here's the question: I spent some time
as a "Ward of the State" and we always used
to insist that the institutional food we
were fed was laced with saltpeter specifically
to kill our sex drives. Is there any truth to
this claim or is it an old wives tale I've been
believing all these years?
