I was lured into buying a piece of frozen salt pork the other day, which I've never worked w/ before. Looks like the pic below. It's Hormel brand, so not the best quality, but it was cheap and should be good for something I figured.
What are some good ways to use it? I have about a 3X4" hunk of it. Was thinking maybe in a lentil soup or bean dish. I have a bunch of dried pinto beans that I need to use up too.
I fried a tiny bit of it the other day and really missed the smoked aroma and flavor that comes w/ bacon. I suppose there are certain dishes that work better w/ salt pork though...thanks for your ideas.
