I understand that the real dry (board like) baccala will keep for a long time, but I just bought some from a grocery where the sales clerk was not very sure of her advice. This fish is what I would call semi firm salted cod( not totally dry) and is in plastic sealed package purchased from the refridgerated section. I Purchased Dec 11, but it was packaged on Dec 3rd, Will this keep in fridge till Dec 24th ?? if not was thinking of soaking now for 48 hours with 2-3 water changes and then freezing till Christmas when I want to use it. What do you think??
