I was reading a post on the SF restaurant board about how somebody was served farmed salmon at a fancy new restaurant in the City.
That got me thinking that I hadn't made my fave salmon recipe lately....Jaimie Oliver's salmon with lentils.
It's a seared salmon filet served with lentils cooked and then mixed with greens (I use arugula, salad mix from Berkeley Bowl and spinach - he uses spinach). At the last minute, you stir yoghurt into the lentils (leaving swirls and not fully incorporating it).
It's quite delish. I usually spiff up the lentils with some garlic and onions, etc. But it's good just the way he makes it.
