salmon croquettes ahead of time

I have to go in to work for a few hours and want dinner to be easy when I get home.

I was going to make salmon cakes with canned salmon (maybe gross but it's a "broke" week and I'm cleaning out the pantry) bread crumbs, egg, maybe celery, and fresh dill.

I was thinking I could make the mixture now and stick it in the fridge and then when I get home scoop the patties and put more crumbs on them and fry. But I don't want to ruin them and waste food so I wanted some input as to whether there's a reason I can't do this?
